Using QuickTime Player 7 (you may need the Pro version) you can set a poster frame. Open the exported movie in QT 7 and move the playhead to the desired frame. From the menu, choose View>Set Poster Frame. To check this, move the playhead to a different position (say, the start of the movie) then select View>Go to Poster Frame. The playhead should jump to the Poster Frame you've selected. Now save the movie.


I'm not sure what YouTube will select, but hopefully one of the 3 will be your poster frame. With MobileMe, you probably have no control over what is selected. Facebook also gives you several alternatives - again, possibly one will be your chosen poster frame.
